While it’s true that campers should choose to cook simple meals like soup and sandwiches when they’re outdoors, one could take the extra step sometimes to enjoy delicious and filling meals even when you’re camping.
Foil packet dinners are becoming more and more popular among campers recently because not only are they easy to prepare, but they’re incredibly satisfying, too! Now foodies can enjoy their favorite pasta dishes even when the cooking tools are limited!
Here are 2 easy foil packet pasta recipes that are a must-try:
Foil Packet Shrimp Aglio Olio
What you need:
- 1 kg. jumbo shrimp, peeled and deveined
- 1.2 kg. linguine pasta
- 1/2 cup olive oil
- 1/2 cup white wine
- 3 small tomatoes
- 4 cloves garlic, minced
- Fresh parsley, minced
- Red pepper flakes, to taste
- Salt and pepper, to taste
- 1/2 lemon
Do this at home the day before your camping trip – cook the pasta for half the recommended cooking time. Drain and set aside. Heat the olive oil over medium heat in a large pot then sauté the garlic for 1 minute. Add the wine and tomatoes to the pot, season with salt and pepper then cook for 10 minutes.
Remove the mixture from heat and place in a large piece of heavy duty aluminum foil. Top with shrimp. Place half-cooked pasta over the shrimp then wrap the foil around tightly into a parcel.
Once at the campsite, cook over the fire for 15 minutes or until shrimp and pasta are cooked through. Drizzle with a bit olive oil and squeeze lemon over pasta. Mix before serving.
Goat Cheese and Tomato Whole Grain Pasta
What you need:
- 1/2 kg. whole grain spaghetti, cooked (subtract 1-2 mins of recommended cooking time)
- 6 roma tomatoes, seeded and chopped
- 1 lemon, sliced into 6 wedges
- 3 cloves garlic, finely minced
- 1 cup fresh basil leaves, coarsely chopped
- 1/2 cup fresh goat cheese
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
This recipe creates 6 packets/servings of pasta – great for sharing with other campers. Prepare 12 pcs of 8×12 inches of heavy duty aluminum foil (use 2 for each packet). In a large bowl, toss together pasta, tomatoes, garlic, basil, olive oil, salt and pepper.
Divide pasta among 6 packets. Squeeze a wedge of lemon and spoon a few teaspoons of goat cheese into each packet then fold tightly into a parcel. At the campsite, cook packets on a grill over a fire for 10-12 minutes, shaking the packets halfway through cooking.
